Bacon Wrapped Whole Pineapple on the Rotisserie – Tommy ‘B’ as in ‘Bama
That headline is kinda misleading. While the picture at the bottom of this post clearly shows a bacon-wrapped pineapple on what appears to be a rotisserie spit, Tommy actually cooked this tasty looking treat in his Big Easy oil-less infrared fryer – but it will cook just as easily for you on your grill using a standard rotisserie spit, in the event you don’t have a Big Easy.

Tommy “B” the creative fella I tapped as the first “Big Easy Oil-less Infrared Turkey Fryer Chef” for the Users Forums has been playing with an idea I had some months back when it seemed just about all the conversations on the Users Forums were about wrapping bacon around this-or-that. meat before smoking or grilling. Bacon-wrapped mushrooms were the favorite food item to experiment with and many different variations were tried … most were successful. So I posed the question: “What would bacon wrapped pineapple chunks taste like?” My first attempt was a dismal failure but Tommy figured out a way to do it. Evidently he kept playing with the idea of pairing up bacon and pineapple, behind the scenes, because this past week showcased his efforts on the Users Forum with this post.

Bacon-Wrapped Whole Pineapple w/Bourbon Glaze
Well after all the talk about pineapple in TBE I just had to try it to see if it would work. Now a few lessons learned on this cook.
- Always use thick cut bacon in TBE, the thin stuff is to thin and will melt away.
- Always make sure your glaze is ready before hand, food cooks to fast to make it after you start to cook!
- Make sure you have your spit rod holder ready, a oven mitt just doesn’t cut it. And Yessir it gets hot!! ….. Wink
Now to the cook. I bought a fresh pineapple at the grocery store that was already cored and ready to go.

I wrapped it in weave using thick cut bacon (after the thin bacon fell off) and held the bacon on the pineapple with toothpicks.

I positioned the bacon-wrapped pineapple on my special holder… [Note: it's a rotisserie spit he's rigged to hang in the center of The Big Easy (TBE) to cook longer pieces of meat like pork loin roasts, etc. If you have a rotisserie set-up on your standard gas or charcoal grill - you too can cook this bacon-wrapped pineapple recipe.]

…so it hung in the center of the cooking chamber and ‘fried’ for 25 minutes before removing to check. (This is when I found the holder for the spit would come in handy!) When the bacon was nice and crisp I lifted the spit and brushed on my Bama Bourbon Glaze and set it (the spit back in place so it hung in the center of the cooking chamber) … for a few min’s.
Tommy’s Bama Bourbon Glaze
- 1 cup pineapple juice
- 4 oz’s bourbon
- 1/2 cup brown sugar
- 1 tbs white sugar
- a very lite pinch of salt.
Cook (in a sauce pan over low heat) until it thickens and keep warm to make it easier to apply to meat.
Once the glaze began to sizzle, bubble and brown I removed the spit (this time using the holder!) and set the crispy bacon-wrapped pineapple in a pan for a few minutes to rest.

Using a sharp knife to slice sections of the pineapple, I enjoyed it with my beautiful wife. What a great addition to a meal! ~ Tommy

pineapple and bacon looks good……but the bourbon glaze is even better……over roasted chicken might be good with the glaze
