Holiday Food: In a Hurry!

I love the holidays because everyone is in such good moods all the time…well except for the folks stuck in traffic jams at shopping centers, or those faced with fighting crowds at stores, or the folks who work retail and 14 hour shifts…ok…I’m not so sure about everybody.

But one thing I am pretty sure about is that holiday food is a delight for the senses! Many of us attend parties or get-togethers or plan and host our own.  The menu for the occasions can be simple pot-luck or somewhat extravagant – depending upon time, budget and the tastes of those involved.  To be sure, in most cases the food is presented with care and love – regardless of the pocket-book involved.

But what if you get a call at the 11th hour from your favorite cousins, Michelle, Dawn and Jamie saying they are in town and just wanted to drop by to say “Hi!” and to drop off some gifts?  And what if they just happen to be in your neighborhood at around, say dinner time?  What then?

I tell you what.  You run to the market, grab a whole chicken and some veggies – maybe a big ol’loaf of bread and a bottle of that wine on sale and you head home as fast as the law allows – because you have a reputation to uphold.  And when they sit down at the impromptu dinner – they are delighted and say nice things – like, “OH CB you always seem to be ready for a party!”  And you wink and nod and say gosh.

Roast Chicken is always a favorite and quick to prepare. I recommend butterflying the chicken before cooking.  It allows the chicken to cook faster and also allows you to get your rub all over the bird, even the underside.

Mike…I agree. This was a method for creating a presentation…and cause it was easy. I like to buy 1 and half chickens to cook for dinner. That way everyone gets something and there’s plenty. Sometimes I’ll just cook one-half as well. Thanks and hey…I recognize that name – you are quite a barbecue master! Glad to have you as a reader!
